Celebrate the vibrant flavours of the season with this luscious Vanilla Panna Cotta. Crafted with Rolling Meadow's rich, grass-fed cream and milk from local BC farms, this dessert is a nutritious indulgence boasting healthy fats like Omega-3s and CLA. Light, creamy, and versatile, it’s perfect for showcasing your favourite local berries and a drizzle of golden BC honey. Simple, wholesome, and undeniably delicious, it’s a sweet treat the entire family will love—ideal for warm, sunny days and gatherings with friends.

Ingredients

  • 500 ml 10% Rolling Meadow Grass-fed cream

  • 500 ml 3.8% Rolling Meadow Grass-fed milk

  • 6 sheets gelatine (use 8 for firmer panna cotta)

  • 1 vanilla bean, halved, seeds scraped and reserved

  • ¾ cup local honey (or equal amount white sugar)


Fruit Relish:

  • Seasonal fruit, diced or cut into bite-sized pieces, lightly sweetened with sugar if needed

  • Fresh mint, thinly sliced

Preparation

  1. Soak gelatine sheets in cold water for 1 minute. Remove and squeeze out excess water; set aside.

  2. Warm cream, milk, honey, and vanilla bean seeds in a pot over medium heat, being careful not to scorch.

  3. Add gelatine sheets to warm milk mixture, whisking until fully dissolved.

  4. Strain mixture through a fine sieve and pour into serving containers.

  5. Refrigerate for 4-6 hours or overnight until set.


To Serve: Garnish panna cottas with fruit relish and accompany with shortbread or sugar cookies.
