Crafted with Rolling Meadow's rich, grass-fed cream and milk from local BC farms, this dessert is a nutritious indulgence boasting healthy fats like Omega-3s and CLA. Simple, wholesome, and undeniably delicious, it’s a sweet treat the entire family will love—ideal for warm, sunny days and gatherings with friends.

Ingredients
500 ml 10% Rolling Meadow Grass-fed cream
500 ml 3.8% Rolling Meadow Grass-fed milk
6 sheets gelatine (use 8 for firmer panna cotta)
1 vanilla bean, halved, seeds scraped and reserved
¾ cup local honey (or equal amount white sugar)
Fruit Relish:
Seasonal fruit, diced or cut into bite-sized pieces, lightly sweetened with sugar if needed
Fresh mint, thinly sliced
Preparation
Soak gelatine sheets in cold water for 1 minute. Remove and squeeze out excess water; set aside.
Warm cream, milk, honey, and vanilla bean seeds in a pot over medium heat, being careful not to scorch.
Add gelatine sheets to warm milk mixture, whisking until fully dissolved.
Strain mixture through a fine sieve and pour into serving containers.
Refrigerate for 4-6 hours or overnight until set.
To Serve: Garnish panna cottas with fruit relish and accompany with shortbread or sugar cookies.
