Ingredients
1 litre Rolling Meadow Grass-fed milk
500 ml Rolling Meadow Grass-fed 10% cream
½ lb Rolling Meadow Grass-fed butter
½ cup flour
1 lb golden BCFresh potatoes, diced into ½-inch pieces, parboiled in salted water, drained
½ lb carrots, peeled and diced into ½-inch pieces
3 stalks celery, diced into ½-inch pieces
1 medium onion, diced into ½-inch pieces
5 cloves garlic, finely chopped
3 bay leaves
3 tbsp salt
1 tbsp cracked black pepper
2 lbs wild BC salmon fillets, diced into ½-inch pieces, baked at 400°F for 5 minutes
¼ cup fresh herbs
Juice and zest of 2 lemons
Preparation
Melt butter in a large, wide-bottom pot over medium heat.
Add onions and sauté for 10 minutes, then add garlic and sauté for an additional 5 minutes.
Add celery and carrots, cooking for another 5 minutes.
Stir in flour to coat vegetables evenly.
Gradually add milk and cream, stirring until mixture is smooth.
Add potatoes and salmon, cooking gently for 3 minutes.
Stir in fresh herbs, lemon juice, and zest.
Serve hot, accompanied by your favourite biscuits or puff pastry.
