Summer Steak Sandwich with Zucchini Tomato Salad

About the Recipe

Summer time is a great time for a delicious steak sandwich! One of my chef tips for a great steak sandwich is to choose the right steak. I start by buying BC Beef, like from Aurora View Farms, and in doing so I support BC ranchers, their families and the communities that raise premium quality beef.

My other tip is to choose secondary cuts for your favourite steak sandwich, or steak salad. Secondary cuts are often more affordable and help the ranchers utilize the entire animal aiding in sustainable farming practices for the ranching family by using and valuing the entire animal. My choices for secondary cuts perfect for this steak sandwich are: - Flat iron - Flank - Sirloin - Culotte - Tri Tip When properly prepared, portioned, marinated and cooked they may just be your next favourite cut of BC beef. Make sure to head to your meat counter and ask the butcher, ‘hey, what's your favourite cut today’? and ask them how best to cook it.

Ingredients


  • 4-5 ounces of BC beef per person

  • olive oil

  • Thick slices of your favorite bread (I like sourdough, thick cut, brushed with butter or olive oil and toasted or grilled)


Grainy Mustard, Horseradish and Chive Mayonnaise

  • 2 cups mayo

  • 1 tbsp grainy mustard

  • 1 tbsp horseradish

  • 1 tbsp fine sliced chives

  • ½ tsp kosher salt

  • ½ cracked black pepper


Zucchini and Tomato Salad

Summer time is packed full of local, abundant (often free from your neighbors gardens ;) and affordable zucchini and tomatoes

  • 1 lb zucchini

  • 1 lb tomatoes

  • olive oil

  • your favourite vinegar

  • fresh herbs

Preparation

Grainy Mustard, Horseradish and Chive Mayonnaise 

Mix everything together in a bowl


Zucchini and Tomato Salad

Grab a 1 lb each of zucchini and tomatoes and slice thin. Dress with extra virgin olive oil and some of your favorite vinegar Season with salt and pepper and some fresh garden herbs


Steak:

Season the steak with salt and pepper

Rub a few tbsp of olive oil all over the steak

Cook the steak on your BBQ or a heavy fry/or cast iron pan until desired doneness

Chef Tip: Let the steak rest for as long as you cook it.


Slice the steak, spoon the mayo on the toasted bread and place the steak on top of that, serve alongside the zucchini/tomato salad and enjoy.
